In the bustling heart of New York, there’s a restaurant that doesn’t just serve food but crafts stories on plates. Somni Tapas, a haven known for its cozy ambiance and open kitchen, stands as a testament to resilience, passion, and the unyielding spirit of its founders, Luis & Manny. But the journey to this culinary masterpiece is as flavorful as the dishes it serves.

Luis’ story begins humbly at the age of 15 when he donned an apron for the first time—not as a chef, but as a dishwasher. With no formal education and little experience, Luis took on the challenge of working in the hospitality industry. It was here, amidst clinking dishes and bustling kitchens, that he discovered his passion for food and the joy it could bring to people.

“I was fortunate to work with great people who taught me not just about cooking but about the essence of running a business,” Luis recalls. “Even then, I dreamed of owning a restaurant with an open kitchen, where guests could witness the magic of food preparation.”

That dream, however, would take years of perseverance. Luis and his brother Manny, co-founders of Somni, began the journey of building the restaurant together. While Luis masterfully orchestrates the kitchen, Manny brings life to the bar, curating cocktails that perfectly complement the flavors of the dishes. Their special bond as brothers was integral to every step of the process. Together, they tested, refined, and perfected every detail, ensuring Somni offered a dining experience like no other.

The name “Somni” emerged from a back-and-forth of ideas between Luis and Manny. Ultimately, it reflects the dream they were building together. “Somni” means “dream” in Catalan, Spain, one of the Mediterranean countries that inspires the fusion of flavors Somni offers.

Opening a restaurant in New York is no small feat. The challenges were numerous, from finding the right staff to navigating the complexities of the pandemic. Just months after launching Somni in its initial location, they faced the heartbreaking decision to close due to COVID-19. “It was the toughest time of my life,” Luis admits. “We had poured our savings into this dream, and suddenly, it felt like it was slipping away.”

But Luis and Manny were not ones to back down. By Summer 2020, with the unwavering support of their community, Somni reopened. Luis credits their success to the relationships they built. “The community’s love kept us going. They didn’t just come to dine; they came to show their support.”

In 2024, Somni found its new home at 15 Lake St., right in the heart of Monroe, New York, nestled within what was once the historic Monroe Town Hall building. This iconic location now houses Somni Tapas, where a cozy dining experience and an open kitchen bring Luis’ lifelong dream to life. Guests are welcomed with warm hospitality and treated to exquisite tapas and appetizers that weave stories of Spanish culture, reimagined for the vibrant New York dining scene. From baby gem Caesar salads to pan-seared Atlantic salmon, every dish is thoughtfully crafted to perfection, offering an unforgettable culinary journey.

Luis’ philosophy is simple: every detail matters. The open kitchen not only fulfills his dream but adds an intimate connection between the chefs and diners, allowing them to witness the artistry behind each plate. “It’s about bringing an extra step of transparency and trust to the dining experience,” he explains.

Despite the challenges, including managing weekday footfalls and creating early dinner specials to attract more diners, Luis remains unwavering in his vision. “Success isn’t just about profits; it’s about seeing the joy on people’s faces as they enjoy the food we create,” he says.

Luis’ advice for aspiring restaurateurs is rooted in his journey: “Do deep research before starting. Understand your community, food preferences, and the challenges of running a business. Passion is essential, but so is preparation. And never be afraid to ask for help.”

Today, Somni stands as a beacon of hope and inspiration. Luis and Manny’s story isn’t just about food; it’s about the special bond of brotherhood, resilience, community, and the pursuit of a dream against all odds. As they look to expand Somni into new towns, one thing remains certain—Luis’ journey from dishwasher to restaurateur will continue to inspire many.
